Gluten Free Choc Chip Cookie Recipe

Ingredients

  • 2 and 1/4 cups of gluten free flour of choice (Bob's Red Mill 1-1 Baking Flour)
  • 1 tsp xanthan gum
  • 1/2 tsp salt
  • 1 tsp baking sod
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 112g unsalted butter
  • 2 eggs
  • 1 tbs vanilla extract
  • 350g choc chips

Methods

1. Preheat oven to 180 degrees celsius and one two baking trays with baking paper. 

2. In a large bowl, whisk the flour, xanthan gum, salt, sugars, and baking soda. Whisk until no more bumps exist. 

3. Create a well in the centre and add in the wet ingredients: butter, eggs, and vanilla. Mix till combined.

4. Add in the choc chips and mix till combined. 

5. Use a tablespoon to scoop out mixture into 24 balls. Place 2 inches apart on the baking paper. 

6. Bake cookies until golden brown and set (approximately 12min).

7. Allow them to cool for 5 minutes until firm. Transfer to a wire to allow them to fully cool. 

8. Enjoy!
